Thai Chickpea Pizza
This classic California style pizza is made on a whole wheat pita crust then topped with atangy coconut based peanut sauce, chickpeas, bean sprouts and pineapple. If your looking for a no fuss gourmet meal then try Thai Chickpea Pizza!
Ingredients
| 5 | pita pocket bread (6-8" Round) | |
| 1⁄2 | red bell pepper (thinly sliced) | |
| 1⁄2 | c | bean sprouts |
| 1 | c | chickpeas |
| 1⁄2 | c | pineapple chunks |
| 6 | green onions (chopped) | |
| cilantro (garnish) | ||
| peanuts (chopped, garnish) | ||
| 1⁄3 | c | coconut milk (lite) |
| 1⁄3 | c | tomato sauce |
| 1 | T | rice vinegar |
| 2 | T | braggs (or soy sauce) |
| 2⁄3 | c | peanut butter |
| 1 1⁄2 | T | ginger (fresh) |
| 2 | clv | garlic |
| 2 | t | agave nectar (or other sweetener) |
Directions
1. Preheat oven to 400-450 degrees. 2. In a blender or food processor add all the peanut sauce ingredients and blend until smooth. 3. Spread peanut sauce over pita crust. Add topping then bake for 8-10 minutes or until the crust is golden and crispy.
Notes
If you don’t already have one - get a pizza stone. Pizza stones make awesome, crispy crusts!
