Squash & Lemon Thyme Soup
This low fat, low calorie - pureed soup uses yellow summer squash, thyme and a hint of lemon for a delicious and guilt free treat! Garnish with green onions, thyme sprigs and some lemon zest.
Ingredients
| 3 | summer squash | |
| 1 | onion, chopped | |
| 4 | clv | garlic, minced |
| 1 | T | olive oil |
| 4 | c | chick'n style broth |
| 3⁄4 | t | thyme |
| 1⁄4 | t | red pepper flakes |
| 2 | T | lemon juice |
Instructions
1. Wash & dice veggies. In a large skillet saute onion, garlic and squash in a dab of olive oil until onions are clear and squash is tender. 2. Add sauteed veggies to a large stock pot. Add broth and thyme and bring to a boil. 3. Reduce heat and simmer 4. Remove thyme sprig. Add red pepper flakes, lemon juice and salt to taste. 5. Serve hot or cold garnished with green onions, lemon zest and croutons.
Notes
For a vegetarian alternative try some freshly grated Parmesan cheese before serving.
