Southwestern Wagon Wheel Pasta Salad
This southwestern style pasta salad is a great as a lite main course or as a side. Textured
wheeled pasta is combined with tomatoes, avocados and peppers then a splash of dressing for a delicious dish.
Ingredients
| 16 | oz | rotelle (wheels) pasta |
| 1⁄2 | green bell pepper, chopped | |
| 1⁄2 | red bell pepper, chopped | |
| 2 | tomatoes, de-seeded & chopped | |
| 1 1⁄2 | c | corn, fresh or frozen |
| 1 | avocado | |
| 1 | T | lime juice |
| 2 | T | olive oil |
| 1 | T | apple cider vinegar |
| 3 | T | cilantro |
| 4 | green onions, minced | |
| 2 | t | cumin |
| 1 | t | onion powder |
| 1⁄2 | t | garlic powder |
| 2 | t | chili powder |
| salt & pepper, to taste |
Instructions
1. Cook pasta according to on package instructions. 2. Wash, rinse, chop and de seed peppers and tomatoes then add to a large bowl. 3. Slice avocado in half, remove pit with a large knife, cut into fourths then remove peel. Place avocados in a small bowl then add lime juice and gently fold to coat avocados. 4. Add dressing ingredients to the large bowl and toss. 5. When pasta is done cooking drain, rinse then add to the large bowl. Toss until all ingredients are evenly coated with dressing. 6. Add salt & pepper to taste. Serve hot or cold. Enjoy!
Notes
As a main course optionally add 1-2 cups of black or pinto beans.
