1. Saute onion, garlic, carrots & celery over medium heat in a dab of oil until onion is clear. 2. In a large stock pot combine the remaining ingredients minus pasta, spinach and seasonings. Simmer for 30-35 minutes or until carrots are tender. 3. Meanwhile cook pasta, drain, rinse & set aside. 4. When carrots are tender add cooked pasta, spinach and seasonings. Cook for an additional 5 minutes. 5. Serve and enjoy!
