Green Goodness Zucchini Soup
This simple pureed soup features broth, zucchini, onion, garlic and olive oil. Easy to make
and delicious to eat. This soup is perfect for mid summer when your garden (or the grocery
stores) is bursting with fresh squash. Pair with a garden salad and crusty garlic bread for
a complete meal. Enjoy!
Ingredients
| 6 | c | chick'n style broth |
| 1 | t | olive oil |
| 1⁄2 | onion, chopped | |
| 3 | clv | garlic, minced |
| 2 | zucchini, chopped | |
| 1⁄2 | t | dill weed |
| salt and pepper, to taste |
Instructions
1. Bring broth to a boil over medium/high heat.
2. Meanwhile saute onion & garlic in a dab of olive oil.
3. Wash, rinse and chop zucchini. Place in boiling broth, reduce heat and simmer for 15-20 minutes or until zucchini is tender.
4. Ladle soup into a blender or food processor and blend until smooth.
5. Season with dill, salt & pepper. Serve hot or cold. Enjoy!
Notes
For a lower fat alternative use a splash of water instead of oil.
If soup is too runny thicken with potato flour or flakes.
