Green Burritos
This green themed burrito combines black beans, green peppers, salsa verde then topped with crisp romaine lettuce and a squeeze of lime.

Ingredients
- 6 whole wheat tortillas flour
- 2 (15 ounce) cans black beans
- 1/2 medium green bell pepper chopped
- 1/4 medium onion chopped
- 1 clove garlic minced
- 1 (19 ounce) can green enchilada sauce
- romaine lettuce chopped
- lime wedges garnish
Directions
- Preheat oven to 350 degrees.
- In a large, hot, skillet saute onion, pepper & garlic in a dab of water for 2-3 minutes.
- Drain & rinse 1 can of black
- Spoon in 1/2 cup of bean mixture, 1 TBSP enchilada sauce and some shredded cheese into tortillas. Fold and place in a large casserole dish. Repeat for all the burritos.
- Top with remaining enchilada sauce, and a sprinkle of cheese and bake for 15minutes.
- Serve burritos hot topped with romaine lettuce, pico de gallo salsa and lime wedges.
