Bowtie Asparagus Pasta
This pasta dish features a light but flavorful cream sauce colored with sun dried tomatoes, asparagus and black olives. This dish is pretty handsome all decked out with a bow tie and all. It tastes pretty good, too!
Ingredients
| 1 | pk | bowtie pasta |
| 1⁄2 | c | sun dried tomatoes |
| 2 | t | chili powder |
| 1⁄2 | t | basil |
| 1⁄4 | t | oregano |
| 1⁄4 | t | marjoram |
| 1 | c | warm water |
| 1 | bn | asparagus, cut into chunks |
| 1 | onion, chopped | |
| 2 | clv | garlic, minced |
| 6 | black olives, sliced | |
| 1 | c | soymilk |
Instructions
1. Cook pasta according to package instructions, then set aside. 2. Saute onion and garlic in a large pot or pan until onion is clear. 3. Add the soymilk and water, seasonings, sun dried tomatoes and olives. Simmer for 5-10 min. 4. Add the asparagus and cook for 6-8 min. until tender but not soft. 5. Add pasta and mix well. Serve hot or eat leftovers cold.
Notes
For a wheat free option, simply replace the bow tie pasta for a wheat free alternative.
