Vegan Brunch: Sleep in until Lunch then Eat Breakfast

Growing up Saturday nights were generally filled with games, sleepovers and late nights. With the late nights the majority of Sunday morning was spent sleeping in then mid morning was a large breakfast/lunch combination aka brunch.
These days not much sleeping in happens on any day (the joys of having a baby) but we still partake in brunch. I love brunch! We recently just finished 3 short cooking videos that combine to make an awesome vegan brunch with: waffles, hashbrowns and tofu scramble. Here are the videos:
Vegan Waffles
When we make a batch of waffles in our house we double the recipe then freeze the extra for a quick weekday breakfast. The waffles freeze great and can be reheated in the toaster. My favorite waffle topping is: Crunchy peanut butter, & apple sauce!
Hashbrowns
I love hashbrowns and have struggled to make perfectly cooked and crispy browns for sometime. Using the process in the video makes for perfect spuds!
Tofu Scramble
Tofu scramble is great as a side or in breakfast burritos with salsa wrapped in a tortilla. I really like to add fresh veggies to my scramble but it is good plain as well.
