Strawberry Vinaigrette Dressing & Delicious Salad

I love strawberries! These sweet little berries can really make pungent bitter salad greens, delicious!
The other day dinner time was rolling around and it was my night to make dinner. I went to check the menu and it read, “Salad & Leftovers”. We had an abundance of salad greens but no other salad toppings: tomatoes, carrots, cucumber...ect and there was no leftovers for leftovers.
As I surveyed the remains of our pantry and fridge I pulled out some salad greens, some leftover onions, then I spotted a few stray strawberries from breakfast. With these three ingredients it was decided...salad with toasted pecans, fresh strawberries & a improvised strawberry vinaigrette dressing. Here is the recipe:
Strawberry Vinaigrette Dressing
Easy & tasty dressing perfect with fresh spinach, red onions, toasted pecans & topped with fresh strawberries.

Ingredients
- 2 TBSP strawberry jam
- 1 TBSP balsamic vinegar
- 1 TBSP lemon juice
- salt to taste
Directions
- Whisk together all ingredients & toss with salad.
- NOTES
- You can vary each ingredient to get the consistency and taste that you desire.

The salad was DELICIOUS! It made two heaping plates and while it was a light meal it was enough. While this dressing is super simple it was delicious! And I would much rather whip up small batches of dressing on the fly then buy a large bottle of dressing and have it go bad.
