Garden Fresh Mexican Rice Salad Recipe

Peppers, zucchini, cilantro, green onions, corn are all veggies that are SLOWLY growing in our garden this summer. Even though I haven't been able to harvest these from my garden yet I have enjoyed the abundance of fresh veggies from the farmers market. One dish we have really enjoyed this week that uses fresh summer veggies is our Mexican Rice Salad recipe.
Our family has been on a quest to eat healthy food that doesn't cost much. This simple recipe fits the bill (literally). Mexican Rice salad uses healthy yet cheap ingredients and the recipe makes a pretty big batch that sits in our fridge for quick lunches all week long. We add black beans to the base recipe for some protein then fill fresh tortillas with rice salad, salad greens, avocado & salsa for a delicious meal. Here is the base recipe:

Mexican Rice Salad
This Mexican inspired rice salad is a wonderful blend of summer veggies, citrus and herbs. This versatile salad is great as a side or a topping for burritos, tostadas or nachos.

Ingredients
- 2 medium zucchinis
- 1 medium lemon juiced
- 1 medium lime juiced
- 4 cups jasmine rice cooked
- 1 cup corn frozen or canned
- 3/4 cup cilantro chopped
- 1 medium red bell pepper chopped
- 1 Tbsp cumin
- 4 green onions chopped
- 1 (4 ounce) can green chiles
Directions
- Saute zucchini in a dab of oil.
- While zucchini is cooking, chop the cilantro, pepper and green onions.
- Place zucchini in a bowl and pour lemon & lime juice over the zucchini.Gently fold together the remainder of the ingredients.
- Allow to set in fridge for 15-20 min. to allow flavors to fully blend.Add salt and pepper to taste.

Serve as a cold salad or as an addition to a burrito filling.
NOTES
This dish is great for large crowds as it makes a big bowl and is cheap!If you have leftovers add some black beans and use it as a burrito filling for a quick lunch.
