Fresh Summer Cucumber Salad Recipe

Summer has finally arrived and a bit late up here in the Northwest. We left for a short vacate 2-weeks ago to visit family in Kansas & Ohio. When we left the weather was in the mid 70’s with little humidity. After stepping off the plane the wave of heat and humidity was like a steamy embrace. We are now back from our travels - and it's good to be home! While it has heated up drastically since we left I'll take dry heat over humidity anyday!
I L-O-V-E the abundance of summers fresh produce...leafy greens, tomatoes, cucumbers, squash...these ingredients just scream light dishes like sandwiches & salads. We are pretty busy these days working on downsizing the house and remodeling the airstream so simple and easy summer dishes like salads & sandwiches fill the lunch menu.
Yesterday we bought some English cucumbers for sandwiches then I thought they would make an awesome cucumber salad. Here is my recipe:
English Cucumber & Dill Salad
Easy dill spiced salad with English Cucumbers & red onions.

Ingredients
- 2 large English cucumbers deseeded & sliced
- 1 TBSP salt
- 1/2 small red onion thinly sliced
- 1 tablespoon balsamic vinegar
- 1 tsp sweetener
- 1 teaspoon dried dill or 1 tablespoons fresh
Directions
- Slice the cucumber lengthwise, remove the seeds, and cut into chunks.
- Thinly slice the onion.
- In a colander, toss the cucumber and onion with salt and let it sit and drain for 15-20 minutes in the sink. Press out the liquid of the vegetables and rinse well with cold water.
- In a medium bowl combine the vinegar and sweetener then stir well.
- Add the cucumber mixture and toss to coat.

Stir in the dill. Enjoy!
NOTES
This mixture is excellent as is or serve over a bed of fresh greens and top with cherry tomatoes and black olives for more of a dinner salad.

We don't have English
We don't have English cucumbers in my neck of the woods but I think this would work fine with regular cukes. All the ingredients in the recipe compliment the flavor of the cucumbers.
