Summer has finally arrived and a bit late up here in the Northwest. We left for a short vacate 2-weeks ago to visit family in Kansas & Ohio. When we left the weather was in the mid 70’s with little humidity. After stepping off the plane the wave of heat and humidity was like a steamy embrace. We are now back from our travels - and it's good to be home! While it has heated up drastically since we left I'll take dry heat over humidity anyday!
I L-O-V-E the abundance of summers fresh produce...leafy greens, tomatoes, cucumbers, squash...these ingredients just scream light dishes like sandwiches & salads. We are pretty busy these days working on downsizing the house and remodeling the airstream so simple and easy summer dishes like salads & sandwiches fill the lunch menu.
Yesterday we bought some English cucumbers for sandwiches then I thought they would make an awesome cucumber salad. Here is my recipe:
Easy dill spiced salad with English Cucumbers & red onions.

Total Time: 25 Min
2 large English cucumbers deseeded & sliced
1 TBSP salt
1/2 small red onion thinly sliced
1 tablespoon balsamic vinegar
1 tsp sweetener
1 teaspoon dried dill or 1 tablespoons fresh
Slice the cucumber lengthwise, remove the seeds, and cut into chunks.
Thinly slice the onion.
In a colander, toss the cucumber and onion with salt and let it sit and drain for 15-20 minutes in the sink. Press out the liquid of the vegetables and rinse well with cold water.
In a medium bowl combine the vinegar and sweetener then stir well.
Add the cucumber mixture and toss to coat.
Stir in the dill. Enjoy!
This mixture is excellent as is or serve over a bed of fresh greens and top with cherry tomatoes and black olives for more of a dinner salad.
