Eat your Oatmeal because it's Cheap!

I've never been a huge fan of oatmeal...maybe it's the texture or maybe I just ate it too much as a kid. Whatever the reason I am trying to kick my dislike of the mush because oatmeal is awesome! Awesome on the pocketbook at only a few center per serving plus it's filling and nutritious. Maybe my awesome reasons should be reordered but cheap food is a real priority for our family right now.
The Peterson family has been 100% self employed for almost 2-months now and as Shae finished teaching in June and is a full-time stay at home mom. As we grow our business we are sticking to a bare-bones budget and keeping our food bill down to a minimum is a must! To keep us on track the next few months we are working on a series of videos that presents nutritious and filling whole foods that are cheap!
First up in the series is: Oatmeal.
When breakfast rolls around you will find a pot of hot mush on our stove most mornings. Since starting to eat oatmeal regularly (out of necessity) I have attempted to find ways to make it more palatable. The nice thing about oats is they are basically a blank canvas...you can flavor and top them with pretty much anything. My current favorite (yep...I am starting to look forward to my morning mush) is:

Basic Oatmeal
Course: Breakfast

Serves: 4
Ingredients
- 1 cup old fashioned oats
- 1 3/4 cup water
- 1/4 cup raisins or other dried fruit of choice
- 1 TBSP brown sugar
- dash of salt optional
- peanut butter optional topping
- fresh fruit & berries optional toppings
Directions
- Add water, dried fruit, salt & brown sugar to a small pot and bring to a boil over medium heat.
- When water is boiling quickly stir in oats, cover and simmer for 2-3 minutes.
- Remove from heat and continue to cover until desired consistency is reached or until you are ready to serve.
- While oats are cooking wash, rinse and cut desired fruit toppings like: berries, banana, kiwi, peaches, apples...
- Spoon oatmeal into bowls, top with fruit and add a dollop of peanut butter then enjoy!
Shae likes to top her oatmeal with a splash of vanilla almond milk. I prefer mine dry and peanut-buttery.
If you are not a fan of oatmeal I challenge you to give it another try cooked with your favorite dried fruit then topped with some peanut butter and your favorite fresh fruit. If you are a fan of oatmeal what’s your favorite way to consume it?

I also am not a huge fan of oatmeal. One way that I find I LOVE (and actually look forward to) eating is refrigerator oats. Way easy. No cooking involved. AND the flavor combo's are endless.

Although I'm not particularly
Although I'm not particularly fond of oatmeal, I eat it 3 or 4 times a week because it's cheap, filling, and healthy. I have found that it tastes better with some sort of fat, such as butter or peanut butter, and I like to add brown sugar and a splash of non-dairy milk. I'm still working on giving up all animal products so at the moment I use real butter, although I plan on buying the vegan Earth Balance and giving that a try. Craisins are also good in oatmeal.
I agree about the peanut
I agree about the peanut butter! I just started putting peanut butter & jelly in my oats and I can get through the whole bowl without a single gag reflex!
