Tofu is like a blank canvas. Its (mostly) tasteless and semi-solid texture can take on many forms and flavors. While tofu is not necessarily a whole-food we do occasionally use it. One of my favorite forms of tofu is a breakfast tofu scramble.

In the Peterson house we have kicked our Wheaties (traditional cold cereal) to the curb and have a new weekday breakfast tradition that’s super easy, healthy, filling and delicious! It’s packed with fresh fruit, whole grains, healthy fats, protein – it’s everything you need to start your day!

I am really digging our food this summer...literally... The community garden project we started is bursting with fresh salad greens: arugula, lettuce, chard and some other varieties I have no clue of (we were donated a bunch of random seeds for the garden). These greens have been awesome in salads, burritos and wraps! Wraps and wrap fillings is the topic of today's post.

Ah, meal planning. It's the single most effective step to cooking real food from home, eating healthier meals, increasing efficiency at the store, decreasing the grocery bill, and actually enjoying family dinner (source: perceptions in my head). I'm not sure any actual data has been collected to prove that, but testimonies abound to emphasize the point. If you want to eat healthier or save money, meal-planning is a must.

Almost a week into our vegan diet and not too much has changed. No, let me rephrase that. Not too much has changed with our menu, but plenty has changed in how I'm feeling (for the better)! More on that later.

Happy Holidays! Christmas break started last Friday and since my wife is a teacher she got a few gifts from her students. Over the years there have been many interesting gifts such as: school inspired ornament set, pewter apple paper weight, ABC lapel pin and lotion. While the gesture is kind the majority of these gifts either end up in our re-gift box or on the shelf of a local thirft-store. Except of course the coveted gift cards to Jamba Juice and Starbucks (attention all students - trading A's for gift cards).

Tonight’s Meal Staycation was Mexican Food! My wife and I left the house to do some Christmas shopping and when we returned home the smells of veggie-burger meat, warm tortillas and a rainbow of veggies in bowls was lined up on the kitchen buffet.
