Description

Quesadillas are a great Mexican-inspired snack food with cheese melted inside a tortilla. Additional ingredients make for a heartier, sometimes tastier treat. Serve these delicious “cheese tortillas” as an appetizer, as a side to your favorite Mexican dish, or as a snack on game night.

Ingredients

  • 8 tortillas, corn or flour
  • 2 c cheese
  • optional veggies
  • optional toppings or dips

Instructions

1. Heat medium skillet on medium heat. Prepare desired veggies and toppings.

2. Place tortilla on pan, add cheese and desired veggies, top with second tortilla. When cheese begins to melt, turn tortilla and lightly brown other side. Repeat with remaining tortillas and cheese.

3. Cut into fourths for easier eating, then top with additional veggies or desired dips.

Notes

For a vegan alternative make a cheese sauce or buy a vegan cheese product.
