Roasted Tomato & Basil Soup
Description
This homemade tomato soup is bursting with flavor! Oven roasted tomatoes and fresh basil is pureed into a rich creamy treat. Grilled cheese sandwiches, or dipping bread are perfectly paired with this creamy soup.
Ingredients
- 8 small tomatoes (3 lbs)
- 1⁄8 c olive oil
- 1⁄2 med onion
- 2 clv garlic, minced
- 1 cn diced tomatoes
- 1⁄4 c fresh basil, chopped
- 2 c water
- 1⁄4 t thyme
- 1⁄4 t red pepper flakes (optional)
Instructions
1. Preheat oven to 400 degrees. Wash and cut tomatoes in half. Toss tomatoes with olive oil and place in a 9x13” casserole dish. Roast for 25-30min.
2. While tomatoes are roasting, dice and mince garlic. Saute on medium heat in a large stock pot until onions are clear.
3. Add in diced tomatoes, water, basil and thyme. Bring pot to a boil, then reduce heat and simmer.
4. When tomatoes are done roasting, add them to the pot. Simmer for 10 min.
5. In small batches, puree soup to desired consist-ency in a blender.
6. Salt and pepper to taste, then enjoy!
Notes
If fresh basil is not on hand replace with dried basil - to taste.
For some added punch of flavor and spice sprinkle in some red pepper flakes.
