Roasted Garlic & Quinoa Stir Fry
Description
If you are unfamiliar with Quinoa (KEEN-wah) allow me to introduce you...Quinoa is the
mother of all grains (according to the Incas) its packed with protein and features a original
shape, texture and nutty taste. This simple stir-fry uses roasted Quinoa instead of rice
flavored with garlic and loaded with veggies.
Ingredients
- 2 T oil
- 3⁄4 c quinoa, uncooked
- 4 clv garlic, minced
- 1 1⁄2 c vegetable broth or water
- 18 oz frozen stir-fry veggies
- 1⁄4 c slivered almonds
- 1 T braggs or soy sauce
- 3 green onion - chopped
Instructions
1. Heat a large skillet to medium/high heat. Add quinoa and oil. Coat quinoa with oil and roast until
grain is light brown approximately 6-8 min.
2. Add garlic and saute for 1-2 minutes until fragrant.
3. Add broth. Cover and simmer on medium heat until quinoa has absorbed all the water and is tender. Add more water if needed.
4. Add stir-fry mix and soy sauce. Heat until veggies are thawed and tender.
5. Add almonds and green onions. Enjoy!
Notes
If you are using water instead of broth add a vegetable bouillon or powdered broth for flavor.
If the garlic, broth and soy sauce is not enough flavor for you add a shake or two of stir-fry sauce.
