Description

Pan fried potatoes (A.K.A. home fries) have many variations. Some prefer to boil then fry, while others fry then bake. These Pan Fried Potatoes are great for those evenings when you need something fast, but warm and filling. This dish is versatile and can be eaten just as a fried potato side or as a one dish meal with any number of added veggies.

Ingredients

  • 4 med potatoes
  • 1 T oil
  • 1 med onion
  • 1⁄2 med red or green bell pepper
  • 1 cn black beans
  • 1⁄2 c spinach, chopped
  • 1⁄2 c cherry tomatoes, halved

Instructions

1. Wash, peel and dice potatoes into small chunks. Toss with oil and add to a large hot skillet over
medium / high heat.

2. Using a spatula spread potatoes evenly so as many potatoes as possible have contact with the pan.

3. Allow potatoes to fry for 3-5 min then toss. Continue this process until spuds are both tender and evenly golden brown. (approximately 15-20 min.)

4. While potatoes are frying gather and prep and dice other ingredients and veggies.

5. When potatoes are about the desired tenderness and color add onion and green pepper and saute for 2-3 min.

6. Remove pan from heat and add the remaining ingredients. Tossing to combine, allow spinach to wilt. Serve hot.

Notes

For some added color and variety add a chopped yam or sweet potato to the dish.

These spuds are great topped with a chunky salsa and cilantro.
