Mashed Potatoes
Description
Get delicious, creamy potatoes without the loads of cream and butter. Whip up your next batch of mashed potatoes with some healthier yet tasty alternatives.
Ingredients
- 6 med potatoes
- 4 water
- garlic to taste
- salt to taste
Instructions
1. Peel potatoes and cover in cold water to prevent from browning until they’re chopped; optionally leave up to half of the potatoes unpeeled. Cube potatoes and add to pot (smaller cubes boil quicker). Cover with water and salt if desired.
2. Bring water and potatoes to a rolling boil, cover and simmer until potatoes are tender about 15-20 min.
3. When potatoes easily receive fork or knife, remove from heat and drain, reserving and setting aside some of the potato water if desired.
4. Add small amounts of potato water, vegetable broth, margarine, or soymilk, mashing potatoes with potato masher or mixing with an electric mixer. Add liquids as needed until desired consistency.
5. Season with garlic and salt, and enjoy!
Notes
For a bit of texture in your mashed potatoes mix red and russet potatoes. For a smoother, less textured finished product choose russet or Yukon Gold.
