Hearty Lentil Stew
Description
Lentils are a hearty, nutrition-packed yet inexpensive food. This stew pairs lentils with chunks of veggies and a lite tangy broth. Let this stew simmer in the crock pot all day or whip it up in under an hour before dinner.
Ingredients
- 1 1⁄2 c lentils
- 6 c cooking water
- 4 c water
- 1 cn diced tomatoes
- 2 potatoes, chopped
- 2 carrots
- 2 celery
- 1 onion
- 2 clv garlic, minced
- 1 c spinach, chopped
- 2 T braggs or soy sauce
- 2 T lemon juice
- 2 t onion powder
- 1 t garlic powder
- 1 t basil
- 1⁄2 t oregano
- salt & pepper to taste
Instructions
Crock Pot:
Place lentils, veggies and seasonings in crock pot, add 6 cups water and let cook on high for 6-8 hrs. Adjust seasoning to taste and serve.
Stove Top:
1. Rinse and sort lentils removing any debris. Bring 6 cups cooking water to a boil then add lentils. Cover and simmer until lentils are tender (approximately 15-20 min).
2. Place 4 cups stew water in a large pot. Bring water to a boil then add tomatoes, potatoes, carrots, celery, onion and garlic. Simmer until veggies are tender then reduce heat.
3. When lentils are tender, drain then add to stew. Remove from heat and add spinach. Add seasoning, adjusting to taste.
4. Serve hot and enjoy!
Notes
If you have leftovers, you may need to add a bit of additional water as the veggies and lentils will absorb the original water as they set.
