Description
Heat things up with this fun dish combining elbow noodles, kidney beans and a
complimenting combination of spices. With such a delicious blend of southwest-inspired flavors, you won’t believe how simple it is to make!
Ingredients
- 1 pk elbow noodles
- 1 cn diced tomatoes
- 1 cn kidney beans
- 1 cn corn
- 1 med onion, diced
- 1⁄2 med green pepper, diced
- 1⁄2 med red pepper, diced
- 2 clv garlic, minced
- 1 T oil
- 2 T chili powder
- 1⁄2 t cumin
- 1⁄2 t salt
Instructions
1. Cook noodles in a large pot until tender. Drain and set aside.
2. Saute onions, peppers and garlic in a dab of oil in a large frying pan or skillet.
3. Add a dab more oil and the seasoning blend. Mix thoroughly.
4. Add canned tomatoes to pan. Drain and rinse corn and beans, then add to pan. Simmer for 3-5 min.
5. Mix noodles with the skillet mixture. Enjoy!
Notes
This dish is great topped with cheese and goes well with corn bread.
If you’re looking for a bit more spice, add some hot sauce.
