Spaghetti is a great meal--it’s fast, easy, cheap and tasty. Liven up this simple dinner time staple with some tofu-walnut meat balls!
1. Preheat oven to 350 degrees. Use a blender or food processor to make the bread crumbs and to chop the walnuts.
2. Place bread crumbs, chopped walnuts, oats and onions in a bowl and mix thoroughly.
3. Combine tofu, water and seasonings. Blend on high until smooth.
4. Combine wet and dry ingredients; mix thoroughly.
5. Form meatballs with a spoon or ice cream scoop, place on a nonstick pan, and bake 25-30 min. Serve with 26 oz red sauce over 16 oz spaghetti.
Line pan with parchment paper for no-stick hassle.
Also great served in gravy as a side to mashed potatoes.
