Picture This! Mock Apple Crisp

As fall rolled around (a little late up here in the northwest), apples ripened in abundance right along with my craving for apple crisp. I looked over some favorite recipes and cringed remembering the not-so-healthy ingredients in this tasty treat. So, I set out to create a less cringe-inducing alternative. It is with pleasure I present you with Mock Apple Crisp.

Mock Apple Crisp has two (somewhat obvious) parts--the crispy cookie and the apple topping. Pour the apples over the cookie or sprinkle a crumbled cookie over the sauced apples for a more traditional apple crisp look. Mix it up: Try the cookie crisp with another topping like peaches or blueberries, or top your morning waffles, pancakes or toast with this apple topping.
