After years of neglecting squash, I was excited to puree it into something edible. I was also on a mission to convince my husband how filling soup can be (he's not a fan), among other agendas. I found a recipe and enthusiastically started early on my adventure; packing this many firsts into one meal would take time.

Fresh this Season! Winter : Squash

My one and only experience with winter squash involved a yellow mush (how does something roasted turn so soft?) that tasted a bit "squashy"--no amount of brown sugar could mask that decidedly terrible flavor. With that experience 15 years behind me, I am ready to learn more about this intriguing vegetable and excited to cook it into something edible.

I am a vegetarian, so it might seem odd that I avoid vegetables. This started as a young child. With tightly squinted eyes, I'd firmly grasp my nose between my fingers as I gulped water to wash down the tiniest of cut green beans. A couple decades later, not much has changed. There's perhaps a little less drama, but that's only because no one is threatening my dessert. (I've threatened my husband to not threaten me on this matter.)

This time of year I look forward to the field trip my wife (a teacher) takes her 1st & 2nd graders on to Greenbluff, an orchard just north of Spokane, Wash. Even if I dont go - I am sure to enjoy the trip through the fresh apples, pie and cider she brings home.

As fall rolled around (a little late up here in the northwest), apples ripened in abundance right along with my craving for apple crisp. I looked over some favorite recipes and cringed remembering the not-so-healthy ingredients in this tasty treat. So, I set out to create a less cringe-inducing alternative. It is with pleasure I present you with Mock Apple Crisp.

Coming from the mid-west with your typical leaves-change-colors and jackets-are-necessary signs of autumn, something feels a little “off” as we're nearing the end of our first fall in Florida. Temperatures reach 90 as winter nears. Dead leaves clutter our yard, though I can't imagine their origin as all trees are still green. Palm trees taunt hints of summer vacation, even as I think about holiday cleaning before family visits for Christmas.
