Lentil Joes Sandwich - Tasty & Cheap!

I love Sloppy Joes! We generally use TVP (textured vegetable protein) when making this slop. While this works well we have LOADS of lentils, from a fifty-pound-bag we purchased a few years ago. I am thinking about saving this cache of legumes for retirement - but my wife thinks otherwise. So how to consume our plethora of lentils? How about Lentil Joe Slop!
I had seen this concept (using lentils to make sloppy joes) in a few vegetarian recipe books but have yet to try it. Sounds good to me, lets to do it!
The end result was two thumbs up! Lentils need a bit more cook time that TVP but besides this Lentil Joes are simple and are prepared exactly like the other slop. The lentils added a hearty texture, flavor and a boost in protein while giving us an outlet for our retirement legumes.
To round out your Sloppy Joe meal add a few sticks of fresh veggies like carrots & celery plus a side of homemade potato chips! (You gotta check out the homemade potato chip recipe...super easy and delicious!)
• Whole Wheat burger buns
• 1 c Lentils cooked
• 1/2 onion minced
• 1/2 bell pepper chopped
• 1 clove garlic, minced
• 1 15oz can tomato sauce
• 1 tsp onion powder
• 1/2 tsp garlic powder
• 1 Tbsp vinegar
Cover lentil with water then cook for 20 minutes or until tender. Drain off excess water. Combine veggies, sauce and seasonings then simmer until veggies are tender. Serve on whole wheat burger buns.
