Easy Lunch! Leftovers Revisited

Preparing thoughtful and healthy dinners can be challenging enough without adding the commitment of breakfast and lunch! In our house we have attempted to streamline the lunchtime commitment with the regular use of dinner leftovers.
We use leftovers 3-4 days per week (depending on the dinner) then make a simple salad, sandwich or wrap the remaining days. This affords us much less lunch meal prep time and an efficient use of our leftovers.

One thing that makes using leftovers easy is having good storage solutions to organize and contain the food until you are ready to eat it. We love our Rubbermaid plate containers that have 3 compartments: 1 large area for your main course then two smaller sections for sides.
Being resourceful with leftovers for lunches gives us delicious meals without the headache to plan and prepare yet another meal. Revisit your leftovers for lunch!
