Food Staycation - Mexican

Tonight’s Meal Staycation was Mexican Food! My wife and I left the house to do some Christmas shopping and when we returned home the smells of veggie-burger meat, warm tortillas and a rainbow of veggies in bowls was lined up on the kitchen buffet.
The meal was awesome! Here is what we had:
Veggie Burger seasoned with Taco Meat & Green Onions
Black & Pinto Beans
Pan Browned Corn Tortillas
Green & Red Lettuce
White Onions
Tomatoes
Black Olives
Mild Cheddar Cheese
Mild Pico de Gallo Salsa
Fresh Lime Wedges
Corn Tortilla Chips
Tonight’s dinner cost about $13 minus recycling the TVP leftover from lunches Sloppy Joes (new from scratch recipe = good!). If we would have eaten this meal out it would have cost over $37.50 ($7.50 x 5 plus tip - not including drinks).

Everyone had a great time visiting over dinner and my brother-in-law stepped up to do the dishes. So for me this Meal Staycation couldn’t be better – I didn’t have to help prep any of the food or clean a single dish! Vacation indeed!
