You read that right – Black Bean Brownies. Yes, I was skeptical too when my wife informed me she was making a healthy vegan brownie and the ingredients included black beans.
I am a chocolate lover at heart (and I think that several of my internal organs are made of chocolate due to the vast amounts I have consumed over the years). Tofu is like a blank canvas. Its (mostly) tasteless and semi-solid texture can take on many forms and flavors. While tofu is not necessarily a whole-food we do occasionally use it. One of my favorite forms of tofu is a breakfast tofu scramble.

In the Peterson house we have kicked our Wheaties (traditional cold cereal) to the curb and have a new weekday breakfast tradition that’s super easy, healthy, filling and delicious! It’s packed with fresh fruit, whole grains, healthy fats, protein – it’s everything you need to start your day!

A few weeks ago while visiting a friends house the hostess brought out some tall glasses of a semi-clear liquid with ice cubes. With out stretched glass she asked, "want some Ginger Beer"? No thanks I don't drink I answered. The hostess chuckled and replied that this was, "dry" beer and was simply a Gingery drink.

You might remember from a previous post that I enjoy asparagus season. Asparagus has recently become one of my favorite vegetables, so it was a special surprise when my husband brought a bundle of green spears home for our anniversary. We decided to try making a soup with part of the asparagus. The soup turned out more delicious than I anticipated; it will definitely be a repeated recipe in our home.

Cilantro is an herb that has been found to have some important health benefits. Both the leaves and the dried seeds are edible and contain antioxidants, phytonutrients, flavonoids, and active phenolic compounds. The plant is also thought to contain antimicrobial properties, along with anti-inflammatory and detoxification abilities. It is believed that cilantro is helpful in regulating blood sugar, and has been studied for use in the treatment of diabetes in mice.

Welcome back to week 2 of Project: Food Budget!
GOAL: $75/week including any household or personal essentials
ACTUAL: $69.11 ($5.89 under budget!)
SIZE OF FAMILY: 4 -- Daniel, Trina, Brylee and Ian
FOOD GOALS: use items already in pantry, quick simple meals for the couple days when it will be just the kids and I later in the week, restock on some produce and start making smoothies again.
