An excellent way of saving scraps and leftovers to stretch food resources (and save money) is to learn how to make homemade vegetable stock. Homemade stock is a delicious addition to soups, rice, sauces, and as a base for gravy. It provides a boost of flavor to recipes and soaks up some of those vitamins from your vegetable scraps. Homemade stock is easy to make in large quantities and will store in the freezer for up to three months.

Over the years I have found there is an abundance of information about healthy whole-food eating. I am constantly discovering more and finding ways to incorporate a healthier food lifestyle. We have become so far removed from our food and where it comes from, that even the most simple and common sense principles have become lost to our society. If we want to relearn these ideas about food, we will have to put forth a little effort to find out and change our food culture.

Once you’ve done the hard work of planning and shopping, how do you let your family know what’s for dinner? Do you just prepare the meal and let them find out when they get to the table? Or wait until they inevitably ask? That has been my method, and following is my inspiration of creative menu displays to change that.
